Pinterest Challenge - Crock Pot Italian Turkey Meatballs

So for my challenge today I thought I would go with another food item. I found this crock pot healthy recipe and it looked pretty good. I also wanted a way to redeem myself because last time I made something with ground turkey it didn't come out too good.

I have to say this was super easy to make, and came out awesome. It was a little spicy but in a good way. It passed the husband test as he said he would eat it again, in fact he went back for thirds!

I baked the meatballs for the 15 mins as called for in the oven as I only had 3 hours to cook these.

Pinterest Challenge - Organization & Chores

OK I am back, it has been a crazy week but I have returned. With the tragic loss in my mom's group and 2 sick kids at home (one with whooping cough and one with an ear infection/sinus infection) this week sorta slipped past me. The weekend is now here and I'm ready to get back into the swing of things, so here we go

Today was a two for, well technically a three for as I made some more baby food but I will just talk about the 2 projects we did today from Pinterest.

First up an organization project, as that is one of my goals this year to get more organized. I saw this Tension Rod Bottle Holder idea to get rid of some of the clutter under your sink. I have to say it worked out pretty darn good and I am happy with the results. It gives me easy access to my bottles and gets them off the floor to put other things under the sink.


Next up a project for my 9 year old. Mornings and some afternoons have been a struggle with her. She gets distracted and "forgets" what needs to be done to get ready for before and after school. I saw this idea for a chores checklist Originally I was going to make it so she could put her chores on it but I decided to twist it up a little bit and make a list of tasks that need to be completed daily.

I picked up some 1.00 clip boards at Staples and let her paint one anyway she wanted. Next we sat down at the computer and put together a list of her daily tasks that need to be completed. We came  to a conclusion if she completes all the tasks on the list for the 5 school days than she would earn an allowance at the end of the school week. This is going to be an additional allowance to her normal weekly chores allowance. I'm hoping this will help with the battles in the morning and I wont have to be such a drill Sargent. We will see how this goes and will be ongoing. I do have to say she did a great job on her clipboard however.

Life is precious

This week has reminded me of how precious life is and how it should never be taken for granted. One of the mom's in my mothers group of fellow ladies who were due in Aug of 2011 lost her beautiful little boy Easton this week to SIDS. She brought him  to day care and he was put down to sleep at 9 am. Daycare checked on him twice but when they went to check on him at 10 am he had rolled over and was found unresponsive and blue. They did CPR but poor Easton was already in heaven. My heart has been broken in a million pieces for his mommy and daddy (Bridget and Ryan). Their strength amazes me as to be honest I do not know how I would be handling something like that. I seriously think you would have to commit me to a psych ward as I would be suicidal. I would however have to find the strength to go on for Nicole's sake but I just cant even fathom how. I have been holding Emma and Nicole extra close this week, doing extra cuddles and just remembering how precious and amazing my girls are.

Making baby food

So this go around I wanted to try making Emma's baby food. Everyone I have talked to says its really easy and cheaper than buying baby food. Not to mention its healthier for them.

I started off with sweet potatoes, butternut squash and green beans. I cooked the sweet potatoes and butternut squash in the oven. The green beans I steamed in our steamer. Pureed them all in the blender and added water for consistency. Than poured them in ice cube trays to freeze. Once they froze I put them in labeled freezer bags to store. It was super easy!

Made 43 servings of sweet potatoes, 37 servings of butternut squash, and 14 servings of green beans. Grand total of  94 servings (1 oz each) of baby food for $ 11.38

If I were to buy this in jars at the local grocery store (Big Y) with level 1 pureed 2 pack of 2.5 oz (5 oz) costing 1.25 so .25 an ounce it would cost me  23.50

Meaning I already saved 12.12!!

Pinterest Challenge - Valentine's

So today was a two for one. Nicole had to do her Valentine's for school so we decided to do two projects we saw on Pinterest. One for the girls and one for the boys. Both I might add were super simple and came out really cute!

Pinterest Challenge - Teriyaki Chicken

So I took the easy way out again today, well sorta. I went for another food category for my pinterest challenge. I picked a crock pot dish to make for today as I love using my crock pot. I also went for another chicken dish. I'm a very picky eater and don't like alot of foods, but I do love chicken.

For today's challenge I picked Teriyaki Chicken from  this great link on how to prep freezer bags for crock pot recipes. I purchased all the stuff to make up the two bags and stored one in the freezer for a later date. Its such a genius idea, I love simple and practical ideas.

I threw all the ingredients in my crock pot before shuffling off to work and came home to a glorious smelling house. Only problem was I got home later than expected so the chicken cooked a little longer than I planned. The chicken came out a little tough, next time I will use the tenderizer to beat the tar out of it before I throw it in the freezer bags, or the crock pot. Overall though it was a very tasty dish. I have no rating from the hubby department however as he wasn't home this evening to try it, he can eat the leftovers tomorrow.

Pinterest Challenge - Baked Parmesan Garlic Chicken

So my addiction continues. I have pinned 1182 pins since joining this madness and only have actually tried maybe 4 of the things I have actually pinned. This is going to change. My goal is to try and do one thing, whatever it may be, weekly from my pinterest. We shall see how this goes

So lets start with today. I picked something easy as it was a crazy day with Emma still being sick. I needed something to make for dinner and wanted to try something new. Ah ha! Pinterest! I scrolled through my pins for food and came across this Baked Parmesan Garlic Chicken dish that looked good and seemed pretty easy to make. Bonus is it only requires 4 items!

So off to the store I go and picked up the 4 items. Came home cooked up the dish and I do have to say it was very yummy. I will definitely be making this dish again and adding it to my chicken collection. I was pleasantly surprised.

My addiction - Pinterest

So I jumped on the Pinterest bandwagon awhile back. At first I didn't understand it but now I am full on addicted. There are a ton of cool things on there I would of never thought of. There is also alot of arts and crafts projects that I can do with the girls. If Emma grows up anything like Nicole she will be into arts and crafts alot, or so I can hope. I love doing projects with Nicole.

We tackled our first Pinterest project this past weekend. We picked an easy one and something to go with Valentine's Day. It turned out to be super easy and came out cute. We now have a few hearts garland all over the house.

Well my 40th birthday is slowly creeping up on me....I have mixed feelings about this to be honest. I needed a way to look forward to this chapter in my life, rather than be depressed about it. Someone gave me the idea as they were composing their list for hitting their 30's. I thought to myself thats a great idea! Playing catch up again

So yes Im bad at this whole blog thing....need to find more time to post :)

So to update everyone!

12/27/10 got my Beta number 2 results and they were good! 833!! Doubled just like they should of for the number of days its been since my last one.

Next step pregnancy ultrasound to verify pregnancy on 1/6/11

Ultrasound done - 1 baby, Heart rate 120!!! YAY!

Was told to call my OB as they were releasing me to him and set up an appointment (which I did) and if I had and questions to call them till I saw Dr. Cahill. The nurse gave me a flu shot as I was slacking and didnt get one yet this year. I seriously debated it due to having a stuffy nose and sore throat but the nurse told me I would be fine due to not running a fever.

Came home called Dr. Cahill and set up the next two visits, first one is with his nurse Nicky who I love to death to go over family history all that good stuff. The person on the phone told me to expect a 45 minute visit for this. Than the following week I finally see Dr. Cahill for my first offical OB Visit.

So now I wait till my visit with Nicky next week and pray morning sickness doesnt kick in (hasnt yet but I know it usually does around 6-7 weeks which is what im currently at)

Beta Draw Number 2

So mother nature played a trick on us and sent us a nice little blizzard to New England! Work was closed today (YAY) but so was most of the labs till 10 am. Blood work needs to be in before 9 am to get results today so I sucked it up and said we can go later seeing as we are not going to get the results today anyway. Plus it was still snowing and pretty awful out this morning, best to stay home till the roads were safer!


Hubby had to go into work for a little bit this morning but came home around 1 pm to snowplow out the driveway. After that was done, Nicole, hubby and myself packed into the car and headed to lunch at 99 Restaurant. After a nice relaxing lunch we went over to Baystate Reference Labs for my Beta lab draw. My doc faxed the form over to the wilbraham office seeing as I wasnt gonna make it downtown by 9 am this morning to be drawn there. The lab tech was very nice but missed my vein the first time and started the whole digging around trick (hate that) but it actually worked and the blood started flowing in the tube. So now we wait till tomorrow to get the results and hopefully my beta numbers went up alot and everything is ok!

The journey Begins - Catching you all up

So after a few years of trying naturally to have a child and one trip to an RE who I hated I finally broke down and went to the RE my cousin told me to go to from day one. First appointment was in Nov of 2010 and went great. The doc was very nice (Unlike the last RE i went to) and told me things looked good for me to go ahead with an IUI schedule. I was informed to call day 1 when the witch arrived and we would start a round a clomid and schedule an HSG (to make sure my tubes were not blocked) and do ultrasounds day 12 and go from there.


So the witch arrived Early (normal cycle is 32-34 days, this one was 27 days!) on 11/20/10. I call the RE office and inform them of my day one date. They schedule all the tests for me and make sure I got the clomid and ovidrel injection in the mail (which I did). The RE suggests I continue taking the metformin they prescribed (this was making me sick to my stomach) but told me the choice was mine. I decided to suck it up and deal with the waves on nausea and take it. Heck if it could help why not!
Days 3-7 (11/22/10 - 11/26/10) I had to take Clomid 100 mg Daily.

12/1/10 (day 12) and I go in for my Ultrasound. They find 5 follicles measuring @ 8-10. Told me I was clear to go for my HSG later today and to come back on the 4th for another ultrasound.

12/1/10 HSG done, tubes are clear and everthing looks good

12/4/10 Ultrasound found 1 follicle measuring @ 16.5 - RE Office instructed me to do my ovidrel injections tomorrow night at 9 pm to trigger ovulation.

12/5/10 Ovidrel Injection x 2 done at 9 pm

12/7/10 - IUI day. Hubby went in at 7 am for his "donation" than I went in at 9 am for the IUI. Nurse said things looked great and noted he had 75 % - 22 million count. She told me I didnt have to tell him that as it would go to his head haha. I did tell him and his reponse was he has super soldiers - LOL

Now the 2 week wait begins, at least im leaving on a 7 day cruise from 12/11/10 - 12/18/10 to take my mind off things. Took a preggo test with me on the cruise but it came out negative. It was early though.

Took a home preggo test on the 19th and saw a faint faint line. Redid it on the 20th and same faint line...what the heck!

Went to lunch with my cousin (who might I add is preggo) and she told me to just get the digital test so I dont have to figure out lines. Ok did that - went home tried it out and BINGO says Im pregnant!!!

Called the RE office the next morning (it was closed by the time I got home from work) and they had me go in for my first Beta blood draw. Nurse said she would call me by 430 pm and if I didnt hear from them to call them. So I waited and waited and waited and at 430 the phone rings. Its the nurse. Congrats she says, your pregnant!

So me being the nurse I am I ask for the levels! Beta # 1 - 51 / progesterone 15 (14 days post IUI). Those are normal numbers.

Go for my beta # 2 on 12/27/10 (longer wait due to XMas and offices closed). Number needs to go up for things to be good. So here is praying my number is high on Monday!!!

Boston Wrap Up Part 2 - Sunday

Last road trip to Boston, at least for the sailing school trips for a few weeks. Next time we come out it will be to actually go sailing or the second part of Phil's sailing certification series in a few weeks. So today Nicole and I signed up for a whale watch, and im SOOO glad we did. It was amazing! Saw about 50 whales...perhaps more and a bunch of dolphins which made my day. Dolphins are my favorite animal (mammal) in the world, thus why I have a dolphin tattoo!! By the way I took over 700 pictures on the whale watch, here is a little sample...

Boston Wrap Up Part 1 - Saturday!

Well I survived...made it home safe both evenings from our 2 day trips to Boston. I ended up driving to and from both days...made for long days and needless to say I was exhausted when we returned home.
We however had a blast! Phil finished up his small sail boat certification classes and is now certified! Nicole and I did some mommy / daughter bonding and got to see the sights of Boston.
On Saturday we started off the day at Starbucks in the Marriott Hotel till daddy had to go to his class. Had to have our morning java as we been up since 6 am!




















After Phil headed to his class Nicole and I went to the local playground near the harbor while we tried to figure out what we wanted to do for the day. Nicole mastered going down the fireman pole in about 5 minutes time. She was very timid at first but once she saw another little girl do it she had no fear than didn't want to get off the thing!





















Next we decided to attempt the Boston Subway system and head to the science museum. This was Nicole's first time on the T (Bostons Subway system) and she was very excited about it. I wasn't too excited as it was crowded and ended up sitting next to someone who either forgot deodorant or didn't shower. At least it was a short trip!
The Science museum was so much fun! We watched the IMAX dinosaur movie, went on the motion simulator and explored all the different floors. Nicole was all excited she got to see her favorite dinosaur, triceratops! We were there all day and before ya knew it we had to head back to meet Phil. We didnt get to see all the museum had to offer but plan to go back this summer with my nieces and hopefully will see the rest. All in all was a fun day!
